I often am invited to birthday dinners at restaurants where the birthday guest’s bill is split among the other guests. As I don’t drink, am I supposed to pay for the wine that everyone else had?

Personally I am not a fan of the pay-your-own-way dinner for this very reason, it has a tendency to bring out miserliness on the one hand and unreasonable expectations on the other. I think it depends on how the payment is arranged ahead of time. If everyone is splitting the check evenly, then yes, regardless of what was consumed by others. If you are paying for just yourself plus a portion of the guest of honor, then I would imagine that would also be a small fraction of the bottle of wine plus a small fraction of their meal.
